Instructions
  1. Step 1: In a food processor blend 1/2 can of beans and 1/3 cup of aqua faba into a paste
  2. Step 2: Over medium heat add oil and onions and cook until translucent
  3. Step 3: Add ginger and cook until fragrant approximately 3 – 5 minutes
  4. Step 4: Mix spice blend with water and make into a paste
  5. Step 4 (contd): Add paste to mixture and cook until fragrant
  6. GUDDI’S COOKING TIP Stir the mixture occasionally to prevent it from sticking to the bottom and burning
  7. Step 5: Add paste to the mixture, mix well and let cook for 5 minutes

  9. Step 6: Add tomato paste, mix well and cook for a few minutes
  10. Step 7: Add the vegetables
  11. GUDDI’S COOKING TIP Add broth as needed to prevent mixture from becoming too thick
  12. Step 8: Add remaining beans and aqua faba
  13. Step 9: Add the spinach
  14. Step 10: Cover and let cook for 10 minutes
  15. GUDDI’S COOKING TIP Stir occasionally to prevent soup from sticking to the bottom and burning
  16. Step 11: Turn off heat and let rest for a few minutes
