Ingredients

medium potato
peeled and diced

frozen or fresh vegetables

minced fresh ginger

10% cream
( higher % if you prefer a creamy taste)

Guddi’s Korma spice blend

Instructions
Step 1: Put 3 cups of water to boil
Step 1 (contd) Add ½ tbsp of salt
Step 1 (contd) Add potatoes
** In the meantime**
Step 2: Add 2 tbsp of oil over medium heat
Step 3: Add the onions, mix well and let cook for 5 – 7 minutes
Step 4: Add the garlic
Step 4 (contd): Add the ginger
Step 4 (contd): mix well and cook until fragrant
GUDDI’S COOKING TIP Stir the mixture occasionally to prevent it from sticking to the bottom and burning
GUDDI’S COOKING TIP Mixture should be a nice golden brown when ready
Step 5: Using a wooden skewer check the potatoes
GUDDI’S COOKING TIP Potatoes should be soft yet firm when piereced
Step 5 (contd) add the vegetables and cook for 2 – 3 minutes
Step 6: Blend spice mix with 2 tbsp of water and make into a paste
Step 6 (contd) Add it to the mixture, mix well and cook over Low/Medium heat until fragrant
Step 7 Remove vegetables, drain, and set it aside
Step 8 Turn the heat to Medium/High and add the vegetables
Step 8 (contd) stir and mix
GUDDI’S COOKING TIP Stir occasionally to prevent it from sticking to the bottom and burning
Step 9: Reduce heat to a medium and add the cream
Step 9 (contd): Stir and mix well
Step 9 (contd) cover and let it cook for 5 minutes
Step 9 (Contd) When done give it a quick stir
Step 10 Remove from heat and let it rest for a few minutes, garnish with fresh cilantro and serve
