Instructions
Step 1: in a food processor blend 1/2 cup of black beans and 1/3 cup of aqua faba into a paste
Step 2: in a heavy bottom stock pot over medium heat add oil, add onions and sauté for 5 minutes
Step 3: add jalapeños and cook for 3-5 minutes
Step 4: add garlic and cook until fragrant
Step 5: add carrots, mix well and cook for 5 minutes
Step 6: mix spice with water and mix into a paste
Step 6 (contd): add paste to mixture, mix well and cook until fragrant
GUDDI’S COOKING TIP reduce heat to low/medium to prevent spices from burning
Step 7: add bean paste and broth as needed and let cook for 5 minutes
Step 7 (contd): add remaining beans and aqua and cook for 5 minutes
Step 8: add corn, mix well and cook for 5 minutes
GUDDI’S COOKING TIP stir occasionally to prevent it from sticking to the bottom and burning
Step 9: turn off heat and let rest for a few minutes
