Ingredients
- 1/2 onion (yellow or white) diced
- 1 small stub ginger minced
- 1 cup frozen vegetable medley
- 1/2 cup frozen chopped spinach
- 1 tbsp tomato paste
- 1/4 cup oil
- 2 cups vegetable broth
- 1 packet Guddi's Soup Spice Blend
- 1 can 6 bean medley

Instructions
- Step 1: In a food processor blend 1/2 can of beans and 1/3 cup of aqua faba into a paste
- Step 2: Over medium heat add oil and onions and cook until translucent
- Step 3: Add ginger and cook until fragrant approximately 3 - 5 minutes
- Step 4: Mix spice blend with water and make into a paste
- Step 4 (contd): Add paste to mixture and cook until fragrant
- GUDDI'S COOKING TIP Stir the mixture occasionally to prevent it from sticking to the bottom and burning
- Step 5: Add paste to the mixture, mix well and let cook for 5 minutes
- GUDDI'S COOKING TIP Stir occasionally to prevent it from sticking to the bottom and burning
- Step 6: Add tomato paste, mix well and cook for a few minutes
- Step 7: Add the vegetables
- GUDDI'S COOKING TIP Add broth as needed to prevent mixture from becoming too thick
- Step 8: Add remaining beans and aqua faba
- Step 9: Add the spinach
- Step 10: Cover and let cook for 10 minutes
- GUDDI'S COOKING TIP Stir occasionally to prevent soup from sticking to the bottom and burning
- Step 11: Turn off heat and let rest for a few minutes
