Ingredients
- 1 can black beans
- 1/2 onion chopped
- 3 cloves fresh garlic rough chopped
- 1/2 jalapeño chopped (de seed to reduce spiciness)
- 1 medium carrot diced
- 1/4 cup corn kernels frozen or canned
- 3 tbsp oil
- 1/2 avocado cut into chunks
- 1 tbsp fresh chopped cilantro for garnish for garnish
- 1 packet Guddi's Soup Spice Blend

Instructions
- Step 1: in a food processor blend 1/2 cup of black beans and 1/3 cup of aqua faba into a paste
- Step 2: in a heavy bottom stock pot over medium heat add oil, add onions and sauté for 5 minutes
- Step 3: add jalapeños and cook for 3-5 minutes
- Step 4: add garlic and cook until fragrant
- Step 5: add carrots, mix well and cook for 5 minutes
- Step 6: mix spice with water and mix into a paste
- Step 6 (contd): add paste to mixture, mix well and cook until fragrant
- GUDDI'S COOKING TIP reduce heat to low/medium to prevent spices from burning
- Step 7: add bean paste and broth as needed and let cook for 5 minutes
- Step 7 (contd): add remaining beans and aqua and cook for 5 minutes
- Step 8: add corn, mix well and cook for 5 minutes
- GUDDI'S COOKING TIP stir occasionally to prevent it from sticking to the bottom and burning
- Step 9: turn off heat and let rest for a few minutes
