Ingredients
- 1 medium potato peeled and diced
- 1 cup frozen or fresh vegetables (your choice)
- 1/4 onion (any will do) diced
- 1/2 tbsp minced fresh garlic
- 1 tbsp minced fresh ginger
- 1/2 cup 10% cream ( higher % if you prefer a creamy taste)
- 1 packet Guddi’s Korma spice blend
- 2 tbsp oil
- 1/2 tbsp salt

Instructions
- Step 1: Put 3 cups of water to boil
- Step 1 (contd) Add ½ tbsp of salt
- Step 1 (contd) Add potatoes
- ** In the meantime**
- Step 2: Add 2 tbsp of oil over medium heat
- Step 3: Add the onions, mix well and let cook for 5 - 7 minutes
- Step 4: Add the garlic
- Step 4 (contd): Add the ginger
- Step 4 (contd): mix well and cook until fragrant
- GUDDI’S COOKING TIP Stir the mixture occasionally to prevent it from sticking to the bottom and burning
- GUDDI’S COOKING TIP Mixture should be a nice golden brown when ready
- Step 5: Using a wooden skewer check the potatoes
- GUDDI’S COOKING TIP Potatoes should be soft yet firm when piereced
- Step 5 (contd) add the vegetables and cook for 2 - 3 minutes
- Step 6: Blend spice mix with 2 tbsp of water and make into a paste
- Step 6 (contd) Add it to the mixture, mix well and cook over Low/Medium heat until fragrant
- Step 7 Remove vegetables, drain, and set it aside
- Step 8 Turn the heat to Medium/High and add the vegetables
- Step 8 (contd) stir and mix
- GUDDI’S COOKING TIP Stir occasionally to prevent it from sticking to the bottom and burning
- Step 9: Reduce heat to a medium and add the cream
- Step 9 (contd): Stir and mix well
- Step 9 (contd) cover and let it cook for 5 minutes
- Step 9 (Contd) When done give it a quick stir
- Step 10 Remove from heat and let it rest for a few minutes, garnish with fresh cilantro and serve
